Edmondson has worked with Marco’s partners, Fitzers Catering, for 36 years. Edmondson created both of Marco’s Dublin Restaurants, Dawson Street in 2009 and Donnybrook in 2013. Each has a unique character. Dawson Street is an elegant feminine space and so allowed an urban masculine club-like interior. Donnybrook was a cold industrial shed requiring softness, grain, humanity and warmth and so called for a very feminine design.
